Traditional nitrated meats are required to have ascorbic acid (an antioxidant) in order to restrict the amount of nitrosamines that we consume. Nitrosamines are a known carcinogen.
“Nitrate-free” meats use celery juice or other “natural” nitrates, but are not legally required to include ascorbic acid to combat the nitrosamines.
That means eating “nitrate-free” meat is far worse for you than nitrated meat
