It's not hard, though. If you're using semolina, it's actually vastly easier to knead than bread. And with a pasta rolling machine you don't even have to shape it, you just knead it for a few minutes, stick in in the fridge for a while, break off chunks and run it through the machine.

In fact, since fresh pasta cooks so much faster than dry pasta and the hands-on effort is so minimal, it's really no more time-intensive than cooking dried pasta except the inactive time of letting the dough rest in the fridge.

I mainly do it because it's cheaper and I'm an obscenely cheap bastard.

It's extremely hard or impossible to mix all the eggs with all the flour at once, by hand. If you ever try it you'll find out why, what happens is that the egg gets lost in the flour and you're left with a big dry shaggy pile with some strands of wet egg inside. By adding the flour to the egg slowly you help all the flour molecules chain together so the dough can become stretchy and homogenously moist before it dries out. I think the behavior of flour isn't very intuitive because it isn't really similar to any other substance, but if you play with it and commit to wasting some just for experimentation then you'll get a feel for how it behaves rather quickly.

Yeah, canned tomatoes are superior and not just in terms of value or something. The tomatoes they grow for canning are ripened on the vine because they're harvested for immediate canning. Then all that vine-ripened flavor is LOCKED directly into the can. When you buy "fresh" tomatoes at the store, they're generally picked before they're ready and then artificially ripened in the truck or a warehouse, it could be weeks between picking and eating. The problem is I live in a valley that used to he an ancient river, the soil is high quality but it's like 80% river rock. If you plant a carrot it'll be shaped like a corkscrew.

Also we have a shitload of rabbits and they eat everything that is ground level, including my tulips.

For the planter beds I cut up the sod and literally you can't put a shovel more than like 1" deep at a time because you'll hit rocks. Digging down 2" required three wheelbarrows full of rocks be removed, including several boulders the side of watermelon.

Anyway, I got these 24 cu ft planter beds I'm putting down after leveling the soil, they're filled with a mix of logs/sticks/leaf and other compost, chicken manure and some normal soil mixture I got commercially. Need to mulch after the sprouts come up and raise a fence around the perimeter to keep out the rqbbits, deer, and the fucking squirrels that keep digging in my shit to hide peanuts.
