Anyone else really into seafood?
When I was younger, I didn't hate seafood but I didn't go out of my way to get it ever.
Now I'm 26 and I'm into it more than even beef. Mexican seafood is my favorite and it goes great with beer.
But I love seafood in general and find it exciting.
What are your favorite types of seafood?

Same here. When I was a kid it really grossed me out. I live on the ocean and grew up fishing but i was still very picky. Now I love seafood. I love Mexican ceviche too. My favorite fish is black sea bass. I also love shellfish. Mussels, clams, oysters. Also crab is amazing, but too expensive to buy often.

Have you ever had rainbow trout? I had some the other day at Bonefish and it was surprisingly tasty.
I like cooked clams (especially Manhattan clam chowder) but I haven't got into raw clams/oysters yet.
I think seafood is fun because you can eat it while drinking and not get too full unless it's heavy fried shit like fish and chips.

I’ve been wanting to get into cooking seafood more. Growing up my parents only occasionally made salmon or swordfish. Most fish I’ve had in my life was via sushi restaurants.
There’s a super authentic korean Market near my house (in NY) so I get good picking from northeast US and korean favorites. What kind of fish should I be looking out for? What recipes should I make?

same. I think the reason I find it interesting is because there are so many edible species.
While with land animals, Americans really only eat 3 or 4 of them.
That being said, I do a lot of research to see what types of fish are most sustainable. Thankfully Rainbow Trout is a good choice because it's one of my favorite fish.

Grill octopus, either make a pesto or some chilli paste to rub it with before grilling, then eat with cheese and maybe guacamole, all inside a taco. For charcoal-grilled things I recommend corn tortillas, but freshly-made flour should work just as good, just pan-toast them with a bit of butter before assembling

I grew up not liking it, now I like it fine enough to order it at a restaurant. I prefer actual fish and scallops if I'm eating them fairly pure, otherwise fried mollusks/fish are good, I'm ok with unadulterated clams, mussels, oysters but don't prefer them, I do like crab but still don't really like lobster or shrimp for mostly textural reasons

The best taco I've had was in Tijuana. It was a smoked marlin cooked with charcoal and they topped it with a chipotle thousand island sauce/creamy green sauce. But yeah if you're in Baja expect to find tons of raw/semi raw dishes like Ceviche, sashimi, Aguachile, Tirdados, oysters in a black sauce, ahi/uni/clam tostadas etc etc. for prepared dishes it's ensenada fish tacos, camaron enchilado tacos, au gratin pismo clam, pescado zaraendeado, fried Spider crab and lobster with flour tortillas, and caguaatuna. For the most part, Baja shares the same style it does with SInaloa and Sonora but Baja does it better on average.
