Lol this is such a sham, although it is nice working with like minded people but the "serious" restaurants are now filled one trust fund kids who are willing to take drastic pay cuts just to work at somewhere prestigious just because they can afford to. The amount of people who've I've worked with that buy damascus steel knives and tell me about all the nice places they go to eat to yet can't execute service right and just bitch about how somebody else fucked them over is a dime a dozen.There are so many so called "chefs" that can't even do half the shit that they delegate to others but will spend half the day thinking about there next post on Instagram.

I was working in one of the best places in my country far from the tourist areas, we didn't even have a sign out front. The realty is the industry is filled with people trying to race to the top without having to put in the work by sucking up and taking pay cuts. It's easier to work somewhere good taking a poorly paid sous job for 2 years working on their insta clout and finding investors where they'll eventually open up a 30 seat with those investors serving 4 course tasting menu's with fucking twigs and rocks on the plate because NOMA. These idiots will run these restaurants dry of money and start that cycle again with another gullible investor.

My go to was wings and a beer, the idea of cooking anything worth while after staring at copious amounts of nice food, tasting only to see if it's seasoned right for hours will make just want to eat something straight forward with no effort.

its just constant stress and even more if you aren't busy because that means that the restaurant will probably close soon. And then if you reach the highest levels you have to run a kitchen where there will always be problems and the whole restaurant closing thing will never not be a worry

With how competitive the industry is this is a pipe dream. Restaurants need constant baby sitting or else they just slowly lose their quality and eventually close.

I'll eventually open a cafe with a very simple menu that's constantly rotating but nothing too intense. I'm still figuring out what I'd like to make exactly with my parents willing to help with the loan which is better than dealing with investors. My best piece of advice if you want to pursue this career is just learn how to cook well, learn how to cook an onion, learn how to cook a potato and other simple things that people tend overlook since they just want to plate dainty food with tweezers.
