If you have a thermometer, your oil should be at 180 C / 350 F. If you don't, heat the oil over medium heat and stick the handle of a wooden spoon inside the pot; when bubbles start to gather around the wood, the oil is ready.

this is why they're mushy. If you drop them in a fryer full of hot oil, they cook through very quickly and the steam coming out of the fish actually prevents them from soaking up very much oil. cooking them in a pan with a little bit of oil is the worst possible way to cook them, they don't cook through properly and they're greasy af. that "mush inside" is probably half oil.

depends, does the person who you're asking own a deep fryer? then maybe. oil goes bad after a long enough period, i still have a little, i got a deep fryer and do fried chicken once in every few months. it's actually healthier than any restaurant's fried chicken because i can directly pick the ingredients i want to add.

but to further answer your question, i didn't own more than a little cooking oil for cakes and the like until i got myself a fryer. as far as the cleaning goes, it takes a while, but it's easy enough to do, i have a waste container i funnel the old oil into, and then give the insides of the fryer a good scrub with hot water and dish soap, it's a little time consuming, but since i am not frying stuff all the time it's not bothersome.
