soup, slice it thickish and panfry it, dice it or julienne it and throw it in eggs, you can cube and freeze it to have on hand as a seasoning meat. it's cured meat, too, even past its' expiration, it's not gonna go whole bad for a while. i've had cornbread and biscuits with bits of ham baked in that were good
