I think he does it for the same reason that restaurant did it, first impressions. When making a video you want to make something that stands out visually. When in a restaurant you want it to both pretty but easy to eat. That being said Ramsey worked up that oversized burger like it was the only gag he was getting that episode.

Plus I'll never respect an Englishman's opinion on burgers anyway.

At one point in time he was an excellent executive chef. Not necessarily the best cook in the kitchen but the man to design recipes, maintain quality control, and run a kitchen.
