So I'm thinking of starting a food stall at a shopping mall where I would sell enormous portions of food. Where in America would you all recommend I open up? This sushi would be one of the first dishes I start serving when I open.

That's a fairly small amount of sushi for an average-sized person, I'd say? The main reason japanese food cooks so fast and "lasts" so short is that there isn't much density to it. I wouldn't WANT to eat a double helping of fish in that timeframe, but I could easily.
