Spoiler: Chefs don’t sharpen their own knives. The have a sharpener come by the kitchen once a week. It’s more cost effective to do this. Home cooks could learn to sharpen their own knives but it’s hard to argue for it when a professional will do it rapidly and to a better degree than the home cook. Now don’t get me wrong, I’m all for learning new skills. But I’d your objective is simply to have a razor sharp knife (as you should when cooking) exporting this task to someone else makes the most sense.
