You can do that with almost any cheese. An aged sharp English cheddar can be god-tier. Same with a good parmesan in chunk form.

I don't know if they still have it, but Fogo de Chao used to have a salad bar that was worth eating all by itself. Fuck the meats, I'd just go there and devour their giant parmesan wheel.

lol..... i don't actually. i barely tolerate parmesan. i like cheeses that are rich and savory but mild in flavor unless it is mozzarella. sometimes i don't mind some odd cheeses here and there like fancy cheeses such as brie with candied fruit or any cheese used for nachos and spreads.

The continental and US tradition is to serve cheese after the main meal but before dessert. The UK serves it after everything. It's not dessert per se but it's served around the same time. Other countries do serve a cheese platter beforehand though. This is all formal dining of course
