It's the bromelain in pineapple. It's also used as meat tenderizer. Raw pineapple (cooking destroys the bromelain) digests your mouth the more pineapple you eat.

I've been able to get my hands on two pineapples today. I'm hoping to grow a plant from the crown. The "roots" at the base were brown and rather dry. The crowns are soaking in water to see if the roots regenerate. To start something in the middle of Autumn is kinda unwise, but I've got nothing to lose.

The core of these two pineapples were much sweeter than their flesh.

Pureed the core in my blender, too fiberous to humanly chew. From never having peeled a pineapple in my life, to peeling them constantly for weeks, I became quite expert at it.
