People filling up a hot dinner platter are just buying exactly what their mood is striking, and they'll enjoy their lunch at their office, with the scattering of nuts on top, ethiopian stew, then roll into dinnertime with the curry chicken salad on the side, because why not? Or they are only buying one litttle amount of garnish that saves them money from not buying a lot of that item over in produce.
That said, I think it's foolish to do an untended salad bar at this juncture in the pandemic. A proper hotel brunch buffet will have monitored servers replacing spoons, and keeping things cleaner than some free-for-all mid-aisle. No thank you.
