Draining it with a towel or washing it will absolutely remove the water soluble flavour compounds present in the grease released, unless it is cooked to the point of evaporation/boiling, whereupon it is either forced to stick to the surface of a pan or gets reabsorbed into the food purely to maintain isotonic equilibrium. Which is also why many cooks are fine with washing down the fond on a pan, or reducing it to gravy, because the flavour is still contained therein.
