I don't really like pasta that much, but it's ok if you would like to have some because I can just eat something else.

What meats do you guys use for your Ragu? My favorite has to be italian sausage. I currently have some beef chuck in my freezer and was thinking of using that. Should I use any other meat along with it?

pork ragu with calabrian chilis and castelveltrano olives on rigatoni
the absolute final boss of pasta

any meats that need a long time to cook always work well in ragu. beef chuck will be fine. i have used beef short ribs, pork ribs, oxtail, pork hocks, sausage, brisket, beef cheeks, etc. all have been very good. just brown them well first.
