Maple syrup is generally 66% sugar; honey is around 80%.
Supposedly ok for short term unrefrigerated storage, but it lacks the preservative bee enzymes and it does get contaminated and start growing mold if not covered well and kept refrigerated.

Given that maple is moderately expensive, if people want to fridge it, I don't blame them. It's also thicker when chilled, so it pours more like Mrs. Butterworths, like many people are used to. (Warmed maple is better, but no need to be wasteful and ladle it on.)
