So here's how I made sloppa tonight. Took discounted tenderloin that I could tell got to that point because it would have been shit for steaks. Probably came from the ends of the primal or whatever. So at $18/pound it wouldn't be great but at $7 I could figure out to make some good eats. So I trimmed it down and diced the fuckers up, then threw in the pan to brown on medium heat. So I was going for a non-traditional guisa de res, so I choose my favorite taco seasoning, Fiesta Bolner out of San Antonio, which I like because there is no corn starch filler. Then I basically treat it like taco meat, mix seasoning and a bit of water, simmer and reduce. I threw some slices of pepperjack on top because why the fuck not, let those get translucent before stirring them in to finish the melting process. Bam. Ugly good eats. Thank you Big Poppa Sloppa!
