Six months ago, I grated two mature coconuts and allowed the shreds to soak in vodka to make coconut extract.

The extract has been strained, and now I have the shreds to deal with.

What can I do with them?

Understandable, i was raised the same. But i think dumping some already used coconut shavings wont make nonna cry. The only thing i can think of is maybe drying the shavings out in the sun or oven and mixing with granola or to put ontop of yogurt or peanut butter
