The dominant flavour of the dish is that of palm oil, which I forgot to mention.

Now, our palm oil is native, and we don’t have any orangutangs in this continent (aside from politicians). I think it’s a different kind of palm oil from the one used by Nestle and other brands, because it’s very red in colour (ours is), and it has a very pronounced floral aroma and taste. I recommend trying to find it in a Brazilian or Latin American store or website; just make sure it’s “azeite de dendê.”

From my list, I also forgot bell peppers and coriander, as well.

I know the tasting and commentary is a standard part of cooking shows but I find ATK's particularly annoying for some reason. Julia's near-orgasmic reactions made me realize why: people talking about what food tastes like is the same as if porn performers talked about what the fucking felt like after shooting a scene. They can say it felt great, etc. but it's kind of useless unless I actually get to feel it for myself. So unless/until I make the dish being tasted, I won't really know what it tastes like. But they do make a production of it if you've ever seen any behind the scenes footage of the gymnastics the camera operator has to go through to get the right shot.

ATK's recipes are usually come directly from Cook's Illustrated. (Cook's Illustrated has a lot more recipes than ATK, but most of the time you can find the recipes that show up in ATK in Cook's Illustrated a year before it airs)

Cook's Country is strictly American cuisine - contemporary, regional specialties, classic dishes, historical recopies, etc. Cook's Illustrated is covers everything, though these days it seems like it's all Indian/SEA overly spiced slop. There's something in each issue of both magazines you'll probably like, but for me, Cook's Country has a higher hit rate.
