Was going to try to adopt pic related into a backpacking recipe, but I'm not sure how to preserve or substitute the uncooked sausage. The ingredients would have to remain un-refrigerated and poorly insulated for about 36 hours. Not too worried about the pancetta since the TJ's one comes in a sealed container but it is also uncured. I personally don't have issues eating meats that have sat around for a bit like man has been doing for millennia, but I'd rather not serve it to others.

Mountain houses are gross. Great for long distance backpacking without resupply spots though. Other than that, they taste like shit.

Adapt. Try summer sausage, or pepperoni. They can last several days without spoiling. Even certain cheeses can last a week without refrigeration.

Here's a tip anon... you buy cured meats for back packing, sausages are great. Why?

Because they keep for long periods of time, provide good protein and fat, and you don't need to add any salt to your dishes, you just toss the meat in, and cook down with what ever you have. wa la.

make sure it can be kept at room temp tho.
