What the FUCK is going on with chicken meat? Granted quality has been slipping for years, I picked up 2 lbs at a butcher the other day and when I got home and smelled it, it was fucking rancid in the literal sense. I got sold rotten chicken, and this hasnt been the first time. This has happened at more than one establishment and Im tired of it. What the hell is going on with chicken quality control? Is this some kind of socio-economic impact that's affecting the entire market?

No, you shop at shitty places. I haven't had a shitty chicken breast since I stopped buying brine-injected shittery from outfits like Tyson and Sanderson. If an actual butcher is selling you dogshit, then it's time to find a new butcher. I can find great chicken at both a couple of local places around town, as well as air-chilled, non-injected chicken from a decent grocer.

I stopped buying breasts because woody breast is so prevalent, more often than not when I buy a pack of breasts at least a few will have that disgusting texture. I was buying thighs for a while but now I just buy a whole one and piece it up myself.

Tips on butchering a whole raw chicken? I'm in the market for new knives but I have a feeling I'm still doing it wrong even with sharper knives. Should I just go watch a youtube video or something? I successfully separated 50 chicken wings two weeks ago and felt good about that but working with a whole bird is still pretty intimidating.

Yeah youtube is your best bet, pepin has a good video on taking chickens apart. I always cook it whole or buy a rotisserie chicken if I'm feeling lazy, I find it way easier to take apart when it's cooked.

I've had similar problems. I'm assuming it's either due to the way it's processed with water chilling, or because chicken breast is more expensive which leads to quality control issues. Also had problems with a lot of chicken being pumped with too much brine and having a nasty texture after being cooked. I just started getting pork instead, seems like the quality is better and sometimes it's even cheaper than chicken.
