Traditional kitchens are very busy and have lots of people running around, so the headwear lets people know is the Chef and who are the others beneath him and above themselves in the chain of command. It helps to prevent a line cook, for example, from bothering the Chef when his problem can be solved by someone else.

Chef is French for chief. The chef is litteraly that, a chief. In large restaurants you will have multiple cooks and a single chef (really large ones can have a deputy chef). the chef orders the cooks around and often doesn't have time to do much cooking himself. In tiny restaurants the chef may be the only cook. In that case the chef is also the (only) cook.

Lol rarely, half the lower end of restaurants won't make you wear hats and I've never seen a beard net. Corporate makes you wear hats, independently owned places don't. For the record, I mean ballcaps, never worn a chef hat and I'm sous at an upscale Thai restaurant

Each chef has a custom made hat that makes them as tall as the tallest chef, who doesn't have to wear a hat. If a new chef joins a restaurant and is taller than the current tallest chef everyone gets pissed off at them because generally you pay for the hats yourself.
