What are some things you could add onto a Grilled Cheese to make it even better? So far all I can really name off the top of my head is more cheese and bacon, maybe some ham instead.

Any ideas how I can make a better Grilled Cheese?

Use a cheese blend. Good ones to play around with are smoked provolone and cheddar (really any smoked cheese), camembert, fontina, and pepper jack. Add carmelized onions, sautéed mushrooms, a finely sliced clove of garlic, chives, and if you eat meat a slice of salami or ham/bacon and be nice.

Caramelize thin-sliced onions and toast some pastrami on the griddle
Assemble grilled cheese, buttering the outsides
Add a layer of course-grain mustard to the inside of the bread
In addition to Kraft slices, add a heartier cheese like sharp cheddar, emmentaler, or swiss
Add a dash of cayenne, chipotle powder, or spice powder of choice
Cook on a lower heat than you think you need and use a chef's press

More depth, toasty flavor, and better browning than you normally get. It's amazing. Add a few dill pickle slices on the side to cleanse your palate between bites.
