I can't believe US lawmakers want to ban kangaroo meat importation. Shit is delicious and one of the most eco-friendly meats because the livestock practices are fully sustainable.

For steak it's only good cooked rare. Medium high heat for 30 seconds to a minute each side. For stewing, just treat it the same as beef.

Have it at the pub or a few places first, to get the gist of how it's best prepared and how it should taste/feel. It kinda has to be pretty rare but it's hard to get right

I make goulasch all the time and I put some pretty weird shit in sometimes. Cook any meat long enough in oil, water and spices and it comes out tasting pretty good.
Fry some onion finely chopped. Add it to a pot, add paprika, add meat, put on low with a lid. Come back 8 hours later checking to make sure nothing is burning on the bottom. Done.

At my local shops you can buy this kilo bags of kangaroo mince. I just pop that in the pot. I also used the mince to make burgers once which turned out alright.
