I put it in quotes because "sushi grade" isn't a legal grade given by a regulatory body like beef is, but sushi is made using the highest quality fish. The stuff you get in the supermarket is a step down from highest. If you want the best of the best you need to either go to a fishmarket or a fishmonger, which in the Midwest I doubt you have access to. You can make sushi from what you can get, but it won't be like sushi from an East/West coast restaurant.

Call ahead to check for availability if you want something specific. If you want something for sushi, don’t beat around the bush, ask for it specifically, they know what they have that is safe and what isn’t.
If you are driving more than an hour, grab a styrofoam cooler in your way and they will ice pack your stuff for you.
