Nobody fucking lives there. There's nothing but roads, farmland, gas stations and fast food for hundreds of miles. In these rural towns people are typically below poverty, too, so no one is interested in opening mom and pop restaurants because they can't compete with McDicks. The problem with the midwest is that (excepting chicago) it's the most sparsely populated region. You need to actually have people if you are to have a food culture. If there are no people doing things, nothing will happen. Look at Chicago. It produced some original food (like it or not) unlike the rest of the area. It's because THERE ARE PEOPLE there.
