Is there any way to add fat to milk? Say you had milk with 4g of fat per cup and wanted to double the fat content of the milk. Would you simply reduce the milk to increase the solids ratio, or is there a type of fat that can be mixed or bound into the milk?

it's not long term stable but neither is regular milk. it'll form a better emulsion if you blend it. you can add some sort of emulsifier like lecithin, but it's not going to taste like milk.

Melted refined coconut and soy or sunflower lecithin.

Blend the lecithin into the milk and then stream in the oil while blending.

If you do a 1:1:1 ratio of milk:saturated:polyunsaturated fat with enough lecithin to emulsify and throw in 1/4 tsp of lactic acid, 1/4 tsp dextrose, 1 tsp white miso paste, and let it solidify in the fridge, you'll have a spread that resembles something between cultured butter and fresh farm cheese.

Get an immersion blender. Use soy or pea milk because you need the protein, about 2 cups. Add 1/2 tsp lactic acid powder, whisk, let stand 15 minutes so it thickens slightly.

Mix in sugar and invert syrup (1:1) until it's slightly too sweet, since it will get less sweet when frozen.

Add 2 tablespoons corn starch and blend smooth. Cook over medium heat, stirring constantly, until the cornstarch activates and it thickens.

Allow to cool to <60C and blend in about 3 tsp lecithin granules per cup of milk.

Stream in either melted coconut oil or melted cocoa better, 3/4 cup, while blending. Add more lecithin granules if you notice it breaking.

Blend in 1 tsp of hard alcohol of choice to lower the melting point.

Chill until very cold, then whip the absolute shit out of the mix to try to get some air into it. Put into an ice cream machine and when it's as cold as it gets (use a laser thermometer) try to very very quickly scrape into a pre-chilled metal bowl, cover with plastic wrap, and stick into the very back of the freezer to sit overnight.
