It has to be fried, be it pan fry, shallow, or deep fry. Otherwise it's just gray mush.

It gets a very crispy shell due to all the cornmeal - akin to fried polenta cakes.

Leidy's is my favorite as far as widely available brands, but if you can get your hand on that good Amish shit, do that.

There is a country store a few miles from my house that makes homemade breakfast sandwiches for their rotisserie every morning, one of which being a scrapple egg and cheese. It was $2.25, and when I worked at the vineyard nearby I would always stop and get one in the morning. I should go get one again tomorrow morning when I go fishing
