A good quality one is absolutely delicious
Lower quality ones, i'm not fond of, some people are obsessed with them regardless, but for me you gotta get a high quality one. Had one from a local bakery once and they put like Jalapeños in and it was amazing.

The default pork pie is always cured, with that obvious pink colouration.
The melton mobray, specifically, uses uncured meat, and is distinct for that reason, but it's obviously not the traditional pie for most of the country.

If you go to a reputable local butcher and get one fresh out the oven, chances are it will be the best thing ever.
Store bought ones have been, in my experience, universally terrible. The charm and flavour of the pork pie lies in the fat and how it suffuses the pastry and meat. Once refrigerated, it congeals and turns into the jelly mentioned by other anons.
Pork pie variants are good too, there's one from my usual spot that does pork and chorizo pies, absolutely lush
