I don't know if I like red or green chili better. I do green with pork shoulder and potatoes, topped with grated cotija. Red with beef chuck, in a sauce made mostly of rehydrated dried red chilis and some masa. Served with skillet corn bread. I use neither tomatoes nor beans. Nothing against either of those ingredients but I make enough tomato-based sauces otherwise and I don't think the texture of the beans pairs well with the chunks of meat. If I make a quick ground meat chili I'll use both canned tomatoes and beans.

Buncha peppers fire roasted and minced. Chuck roast ground nice and coarse. Onions, garlic, couple choice dry spices, chunk of butter, and a can of crushed tomatoes. Simmer for at least 4 beers but toally cool to go longer.

In a big dutch oven pot on top of the stove, I brown ground beef in it's own rendered fat of course, then I add minced onions, diced bell peppers, jalapenos, maybe green chilies, and saute that shit in the fat. As for spices I use a lot of ground Cumin, some paprika, cocoa powder, black pepper, a some different dried chilies either reconstituted with water or just ground up, and possibly other shit. I obviously put salt in there at some point along the way for taste and I use tomato sauce, some types of broths, and usually a beer for the liquid component. Also I normally add beans, kidney beans and red beans usually.

Slow cooker is not chili good because there is too much fluid left. Chili should get thick.
