Every time people tell me how wonderful artisanal pizza cooked in a wood fired pizza oven is they show me a pic of burnt up garbage like that and I question their sanity
That "char" makes the whole pizza taste like an ashtray

that's the "char" in "charcoal"

A nice wood-fired oven (used properly) imparts a lovely smokey taste
You're right that too many people think burnt wood-fired is: a, good, b, how it's "supposed" to be

Artisanal pizza doesn't mean shit. You want a good artisanal pizza and not everybody can do that like in any other thing.
Pic rel is charred and tasty

>You're right that too many people think burnt wood-fired is: a, good, b, how it's "supposed" to be
It's kinda supposed to be charred desu.

Wood fired oven is extremely hot (400°C ) and it's not uniform, it comes only from one side.
Some spot rise and become extremely thin, if you don't burn them you'll end up with a raw pizza.
You obviously don't eat the burnt spots, and while some degree of char is acceptable, op pic is burnt and not properly made.
Pic instead is an acceptable level of char, you discard (or eat if you want to) those 5 spots of dough

It up to the pizzaiolo, i have seen both.
If you put it before cooking the pizza you put it under the mozzarella.
The rule is having a not cooked nor raw basil. You want something in between

Looks ok, but there are some technical mistakes you made.

The first thing is i notice is that your dough didn't rise properly. It looks like you waited no more than 2 hours.
The results is that your dough is like bread

This only works if you have a very dull palate
Burning (not charring, burning) infuses the entire pizza with dry, bitter ashy flavors
"eat around it" is the equivalent of "just be careful not to scrape any of the burnt parts from the bottom of the pan and serve it anyways"

Why are americans so autistic about cheese? They make such shitty cheese, it's like their pizza is just away to get more shitty cheese down their greasy gullet. That looks good.

>> No.15879551

>>15875974
The dough wasn't spread properly. You'll notice that the burn spots are not on the same level as the rest of the crust, it's just bubbles that should have been taken care of during the spreading. Wood fired oven can result in an uniformly-cooked pizza.
