How do I make a egg sandwich ?
As it is, it lacks some kind of acidity For now i tried onions, peppers and dragons but nothing seems to fix it.

What am I doing wrong?

Onions should be enough, maybe throw some paprika in. Also, let it sit for a while before eating it, like a day in the fridge while mixing occasionally, so everything soaks into the eggs

Also the mustard itself should be doing most of the legwork. If you're using some lighter mustard, maybe try swapping half of it for straight up yellow mustard

I use to use Beets, (fresh of course,)both in a Valentine curry, and to color rice for makizushi rolls.
The curry always was a deep red, but it clors rice an almost fluorescent pink.

It can be made a million ways but you need to master the fundamentals.

Make a perfect, creamy, french scrambled egg. Get the bread at a perfectly light toast, just when it starts to darken. Get a slice of yellow cheese nicely melted over the egg and a light layer of mayo. Once you master the basic elements you can add anything.

the best egg salad sandwich I ever had was made by an Italian lady, I don't know the exact recipe, but she put capers in the egg salad and brushed the toasted bread with balsamic vinegar. it was amazing

I was wrong- your recipe is damn close to what I do for scrambled as well-I do like the occasional hard fried, cut-the-corner-of-your-mouth-on-it fried egg sammie too.
