People who insist on using gas stoves are engaged in the same kind of culture/identity performance as people who insist on rolling coal in their giant diesel truck. You can cook food and get around fine with electricity, but that's not what it's about. That's right. We must start by banning the production of new gas stoves and gas hook ups for new construction. After some time, we may need to take more drastic steps.

I hate induction, because you can only use certain types of pans. Additionally, electricity is way more expensive than natural gas in my area.

Canada's economy is so closely linked with that of the US that it might as well be domestic. I would also expect CA to require far more electricity than WA and OR combined, so I'm most curious about what went on in 2015 when their demand for Canadian hydropower leapt so dramatically.

Gas seems awesome. I use an electric stove because it was here before I moved in and it just works. But gas is better since I can get hotter temperatures and stepless heat adjustment.
I can see why people use electric over gas but sayign that electic is better is just sour grapes.

Flat, electric, "even" heat sources completely fuck with your ability to cook out of a pan. If it were truly a viable replacement for gas stovetops, I'd've seen at LEAST one in a high volume commercial kitchen.
