Searlet must have never achieved a proper sear if you have given up and can't tell the difference.

The secret to a good sear is twofold:
1. Dry surface of the meat. Sous vide and reverse sear fail in this regard and therefore never give a proper sear.
2. Fat must be touching the protein. Grills fail in this regard unless you brush the surface of your meat with fat.

So cast iron pan searing after air drying is best. Cooking in one step. No precooking.

Oven roasted meat has a ton of surface moisture and trying to dry it off with paper towels doesn't work because it is hot and the moisture is coming from inside the meat. Same problem with sous-vide: hot meat with juice leaking out.

The biggest problem with the world today is clueless people speaking authoritatively from their own experience when their experience is severely limited. You've only ever "seared" wet meat so you don't even understand what it is like to sear dry meat, yet you come online and claim you know all about searing meat and your wet-as-hell meat is actually dry.

Try air drying a steak in your fridge overnight and searing it in a cast iron pan with added fat. Then never make an abhorrent post like this ever again.

Here's how I do it. I won't claim it's the best. I'll just say I liked the results enough to do it that way again. It's mostly Alton Brown's method applied to everything.

1) Sprinkle both sides with salt. Let sit at room temperature for 30-60 minutes.
2) Stick on the BBQ at full blast. Timing will vary heavily depending on BBQ, cut, and thickness. For a bone-in rib-eye I do something like 2:30 minutes each side and that puts me in the rare/med-rare ballpark. If possible, add seasonings of choice on the freshly-grilled sides (this way the spices won't get burnt to a crisp by the BBQ)
3) Wrap in tinfoil as tightly as possible, stick in the oven on keep-warm (170F) for 15 minutes.
4) Enjoy.

Cooking a steak in the oven really dries the surface out and make the searing process faster compared to searing a steak from raw.
