I keep a backup in the fridge that gets fed once a week.
It has saved me several times when the counter one got too funky.
As long as both are healthy, roughly every month I take it out, give it a good feeding and the next day make a new jar that’s a 50/50 mix of what was in the fridge and what was in the counter. Assuming that still rises nicely I split it into a new counter jar and a new fridge jar and wash the old ones out.
