My GrandGrand pa was a Butcher in Denmark. Around 18-1900s And he refused to sell ground meat when it got traction. He tought it was (literally) only for babies. He also made a kubelwagen topple over during ww2 by simply not avoiding it with bis bike, makin the krauts oversteer. Apparently he was also the guy called to Get people who had to much to drink out of the local Taverns.

what? no most meat was not prepared whole through most of history. Large animals being bred/raised for purely meat was a rarity any time prior to the 18th century, this was literally a thing for the minority upper classes. Trying to roast a large cut of an animal that had spent its life working resulted in a chewy, unpleasant lump of meat. Stews, sausages, and the like were far more common. Pigs are maybe a different area because they took relatively small area to rear, and ate scraps. Which is why you see larger cuts of pork being preserved by italians compared to shit like beef.
