I know it’s too late now OP but here’s the best way to cook brats:

1. Cook them before the meat starts to go brown.
2. Sauté slivered onions, a lot, in some fat - butter bacon or lard work fine, in a deep pan, a large saucepan, or a dutch oven.
3. Mustard seed and caraway seed in the onions is a nice options
4. Pour a German beer into the pan - whatever you like to drink - enough to just barely cover the brats
5. Put the raw bratwursts in the beer/onion mixture
6. Bring the beer to a boil and let it simmer for 20 min or so, until the bratwursts are cooked throughly. It’s okay if beer evaporates.
7. Remove the bratwursts when thorough cooked, and keep reducing the beer onions.
8. Sear the bratwursts under a broiler or in a grill. Crisp up that outside. Should not take long.
9. Served the bratwursts with toasted buns, coarse ground mustard, sauerkraut, and the onions.

Regarding sauerkraut, you can eat it cold from the brine if you like the crunch and pungent flavor and temperature contrast. Or if you don’t like the flavor of the brine you can rinse it in a collander. Cooked sauerkraut is good - you can heat it in the brine or rinse it and heat it in water. Add some caraway seed if you cook it.
