I'm doing one tonight: 2 blue swimmer crabs, half a kilo of pippies, quarter kilo of prawns, a whole sweet corn, little red potatoes, chorizo and old bay. I've never done anything like this before but I've really been interested in Louisiana recently. Any help appreciated

Some do too much with shellfish and it's fucking retarded. It's always better to steam or bake with a small amount of flavorful liquid (clam juice, seafood stock, beer/wine, seasoned water, etc)to keep it from drying out.

One of the best meals I ever ate was after hurricane Katrina. Was doing disaster relief and this family cooked us a boil in a 50gal drum. Corn red potatoes and crawfish. The tomatoes and chilli/old bay spice blend they made was incredible. The broth from all the crawfish was by far the best seafood broth I’ve ever had. They also smoked sausages to serve with it and just dumped it over a 20ft table. Legit incredible. Have fun OP one of the best foods if you do it right. We used to catch them with hotdogs off the pier with a net.
