Why are there so many different types of beans? None of them taste any different. Do they just keep so many different kinds on the shelf to make you try them all?

And yes, I tried them all. It took me a couple weeks but I got a can of every bean at all local supermarkets and just ate them for comparison. Cooking method was to put the beans in a small saucepan and heat them to a simmer, then eat them plain. Boring, I know, but it was for science. Here are the findings:

>black-eyed pea
>chick pea

These actually taste different or are significantly different in texture or size

>pinto
>black
>navy
>great northern
>large white
>small white
>small red
>cannellini
>pink
>central american red
>dominican red
>Roman

These all taste exactly the same.

Texture, colour and the preparation (dried, refried, cooked with other ingredients) are the main differences between them.

Dried beans are generally a huge pain in the ass. You have to soak them and cook them for a long time. A pressure cooker makes it a lot faster, but the end result isn’t much better than canned.

How on earth do you think pinto beans and black beans taste the same? Pinto is what you use to make refried. Black are totally different. I know this because I do not enjoy black beans as much when I order from Moe's, or I need to pair them with steak or ground beef, and peppers. Chicken just has to be with pinto, no exceptions.

that's why, man. beans are all just regional cultivars of the same plant, and people want THEIR beans. Luckily they dry and can well, so YOUR beans are available to you wherever you currently live.
beans vary in starchiness, protien content, their skins are vary in thickness and require different preparation methods (soaking, addition of lime, soda or salt) and cooking times, and some like black and red beans have a notable flavor and are higher in antioxidants than other beens

at the end of the day, though, they're all beans. get some dry beans and try some recipes. black beans being in your ALL TASTE SAME list is bullshit.

Canned beans are literally just cooked beans, they're the same thing. If you like a softer texture just boil your canned beans for 15 mins and you'll have it, there's literally no reason to use dry beans and spend all that time for the same end product.

Whole beans are terrible from a can
Refrieds can be quite nice but even then if you really know what you are doing , they are better at home.


Canned beans are sometimes overcooked but more often they are undercooked and too firm,
A cooked bean should be pretty tender and just barely be able to hold its shape
