Pretty much that, if not in the same way. I slow-simmer a flat-cut brisket with pickling spices over a relatively low heat for 3-4 hours or until it's completely tender throughout. DO NOT trim any fat at this early stage. When it's done, remove the beef and add diced potatoes, carrot, onion, rutabega, turnip, and/or parsnip and cook until mostly tender. Add cabbage cut into a rough dice at this point, along with a little extra salt and pepper, and cook until it's tender and all of your roots are softened.

Trim your beef of most of it's fat, slice relatively thinly ACROSS the grain, and serve alongside your vegetables and a little bit of pot gravy with a very healthy dollop of prepared horseradish.

A mistake I often made in my youth was to make too many vegetables in regards to the amount of corned beef. These days I tend to skimp and use the extra corned beef for Ruebens in the day(s) following St. Patty's. It's much better than trying to find ways of using extra veggies without the beef. Also, use more pickling spice in the initial simmer than you think you need, I fill up an entire tea bulb with the spice and just drop it in and only finish out when it's finished. If you want a slightly thicker, richer liquid, use stock instead of water.

Anyone experienced with brining their own brisket into Corned Beef? I have my brisket already brined, but I was wondering if I should dump the leftover brining liquid. This can't be repurposed as a cooking liquid, right? Like, for when I boil the potatoes, carrots and cabbage? The darker and fuller a beer is the more sugar it usually contains. Dark malts contain a lot of complex sugars the yeast can't metabolise so they remain in the finished products. Stouts and porters usually have a lot of unfermented sugars

Their St. Patty's special was that you could add gauc to any one item (it had to be added to an item, so you couldn't just add a side for free). One of the best things they have is this dollar "salad", which is a box of ground beef, tortilla strips, lettuce, cheese, and salsa. It's not really a salad, but just a cheap way to get a bunch of extra add-ons for a dollar; at Taco Bell this little box would probably be $5, and today I added three (3) scoops of guac at no extra charge (because it's green, I guess).
