Nah like I would say sushi is over rated, Japan is an island nation so it makes sense they have fresh fish all the time and a great selection, Americans have like the gulf that's filthy, the east coast that's dirty unless it's super far north and the west coast, sushi in Montana is not worth the price as there is no way that fish was caught that day or it is river fish which isn't quality for sushi anyway. Ramen is a bit overpriced but honestly you usually get what you are paying for and it's good comfort food combining soup with noodles as far as Americans are concerned it's the two other alternatives to ground beef in one

I know what you mean. I'd rather have mid-tier ramen for cheaper and its just as good. But instead they make it seem like such a novelty with ingredients that dont add that much flavor but add to the bill. Dumb shit like rare mushrooms and japanese shallots and meat marinated in super expensive soy sauce or whatever the fuck. Here in Scandinavia a bowl of ramen thats not even that big is 20$. I've since learned to make my own for 1/4 of the price per bowl and better suited to my tastes.

Because it’s still in “trendy” status as a food, much like sushi was 30 years ago.
Ramen shops in NA are typically found in trendy higher-rent areas where the space is an expensive lease, and they gotta pay those expenses, and they don’t have tons of other shops to compete with.
Go to the highest rent areas of Tokyo and you’ll see similar prices at ramen shops.
If it ever reaches the point where it’s seen as the inexpensive comfort food it’s meant to be, then the number of shops and their prices will begin to reflect that.

Most ramen shops outsource their noodles, they're handmade but they're from a dedicated noodle wholesaler that makes bulk orders according to the shop's particular recipe.

I made ramen over the christmas break, it was pretty good but even with some shortcuts it was a real ordeal to put together. Makes a lot of sense why it's almost exclusively a restaurant thing, it's a huge pain in the ass to get all the individual elements prepped but once they are it's just a matter of assembling everything in a bowl.
