Because American cheese is real cheese. You know real cheese has salt or other preservatives or flavorants added to it? Well process cheese has salts added to it too - salts with emulsifying properties. Anything advertised as “American cheese” is cheese, full stop.

And I use white American cheese because it adds a creamy texture and some fat to the sandwich for satiety, as well as a nice mild flavor that doesn’t overpower the flavors of the meat. Italian cold cuts often use provolone because it’s mild too.

Depending on where I get it, it is either turkey or roast beef.

When I make my own, I use part of a loaf of french bread and both turkey and roast beef. I put the roast beef and turkey (sliced very thin) on a baking pan and warm them up in the oven for a few minutes. Take them out and put them on the toasted bread.

Also, there are usually some juices left in the pan which I either pour on the sandwich or on the dog food. The dog really prefers the latter.

Then mayonnaise, onions, pickles, tomatoes, and lettuce.

Great question. Ham by itself is very lean. Salami has a lot of fat, but has a nice, sharp flavor from curing and fermentation. It’s a good flavor but a salami sandwich by itself is quite pungent. Bologna is an emulsified sausage with a high fat content and a creamy texture. Ham supplies bulk protein, salami provides a dash of sharpness, and bologna provides creaminess and fat.

So yes, there is a problem being solved - ham by itself is too lean, salami by itself is too sharp, and bologna by itself is too fatty and bland.

1) Turkey/ham, ham, cheese. Throw horseradish onto the bread and a dollop of mayo, mix and you have a nice horseradish sauce, no additional bowls needed.
