The idea would be to have a restaurant with food and cleanliness to my standards and that served food that I would like to eat.

When the restaurant next to my office went up for sale a few years ago, my niece wanted to buy it and run a restaurant.

I told her that if she was going to do that, she should get a few years of experience in the restaurant business first as a cook, a waitress, and a restaurant manager.

I have no doubt that if she bought the restaurant, she would lose money every year and it would not be run very well. One thing for her is that she and her husband love to run around all over the country. I don't think she would be able to put in the time to make it work.

A few years ago in the next town over, there was a pretty good little place to eat and I'd go in there once a week or so. The owner was a young woman (about 30 or 35). She would often close the restaurant for the afternoon when she wanted to go somewhere. Finally, she closed it early one Friday afternoon and never bothered to open it again because she was so bored with it.

What struck me as funny was an advertisement wanting someone to buy a franchise for one of the more costly franchises in the next town over.

Someone would be crazy to do it.

First of all, there isn't enough through traffic there to make a profit off of just the through traffic. If they didn't put it out on the main highway, there would be no through traffic.

Second, for the locals, the franchise name wouldn't make any difference. They wouldn't go there for the franchise name. Within a couple of weeks, everyone in the area would know whether or not it was worth stopping there.

Third, their gross income would be a small fraction of what it is in a better location. Yet, they would still have to pay those high franchise fees and a portion of their gross as well as buy what goes into their food from the company. And they would have to live with whatever specials the company runs that might make sense in a big city.

They would lose their shirt.

There is a place of the same franchise in another nearby town. I've eaten there maybe twice in the last ten years and was the only customer there. And no wonder, the food wasn't very good.

The odd thing, to me, about that place is their location. There is a major highway that runs through the town, but they built the franchise quite a way from that major highway. If they had opened it on the major highway, I bet they would do much more business.

My dream is to open a small counter-serve sandwich shop. Food truck would be fine. Every day I would serve one type of sandwich. No substitutions. No size differences. Would come with a drink and a bag of chips for 10 bucks.
