Low fat bologna doesn't fry up properly. It's supposed to render some fat.

Bologna isn't amazing, but it's ok when thick sliced and fried.
Lebanon bologna isn't bologna; it's more like a smoked summer sausage. That stuff is much better.

She also puts cheese in her bologna salad, which I think is a mistake.
Bologna salad isn't awful stuff; bologna, mayo, pickle is pretty decent in a sandwich; bologna salad just gets the ratio pretty much right and minces it.
