How about an ipe countertop? See picture.

For those who aren't familiar with ipe, it is supposedly the hardest wood in the world. I've heard that they can't even hammer nails into it, but have to drill holds and bolt it with special bits.

Some years ago, there was a fire along a boardwalk that had the usual woods but with ipe in places. While the usual woods were destroyed, I understand that the ipe was hardly damaged at all -- maybe a few scorch marks.

Not if you use thick steel. The only problem is that it WILL get scratched and that's a bad look. On the bright side, you can always polish it back up. I knew someone that had varnished wood countertops in their kitchen that really brought aesthetics up to another level. The best thing about it too is that you can re-varnish it after a few years and capture all the cut marks and stains under the new coat which really gives it a nice rustic look, pic related.
