Go look how many "cook a perfect steak" videos are out there which call for all these thermometers and probes as you put the meat from the stove to the oven and back. Adam's steak-cooking tutorial is about learning what a steak literally just feels like with your finger when it goes from raw to done.

People don't think that beef is safe to eat at x degrees so that's the temperature they aim for, people think "i'll cook it until it looks right", intuitively. All the good cooking tools in the world don't stop people from overcooking/undercooking things, they don't teach people how ingredients interact with one another, and in most cases they don't just magically make things taste better. It's better to teach people to walk before they run instead of encouraging people to buy a bunch of shit that they don't even know why they are buying it. Give an absolute beginner cook an expensive knife set and watch how many of them are misused. That's not Ragusea's advice, though. His method is to feel the firmness/bounciness of the flesh of the steak in various places when it's raw and how to compare that to how it should feel when it's up to temp. The idea being that every steak is a bit different so learning to compare a steak to itself will help you more intuitively cook even unfamiliar cuts of steak or slightly thicker or thinner cuts. It also avoids the finicky readings of cheap thermometers.
