I love Asian soups of all kinds. Dumperringh soup, pho, laksa, tom kha, tom yum, wonton soup, miso soup, udon... it's all so fucking perfect.

BUT I tried eating Korean soups for like years and it's literally all trash. Blood red broth with no discernible flavour and it's booby-trapped with inedible twigs and clippings and yucky mush fungi and a bunch of other dumb shit. You never see minority cuisine represented outside vietnam/laos/yunnan.
Pho is all about ingredients, outside the region the myriad of native herbs and spices are typically excluded simply due to lack of availability.
Crab and pork fried spring rolls are particularly good.

Chinese cabbage is a modern vegetable. The chili pepper is Hideyoshi. Court cuisine is not a course style.

They can do nice fried chicken, grilled meats and stews but there's really nothing complicated with Korean food it's one of the easiest cuisines to cook as well. Compared to China where every region has centuries of historical cuisines behind it or Japan, Korea just feels like a poor pale imitation mixed in with processed WW2 foods.

Greek food is fucking disgusting. They take these beautiful cuts of meat and cover them in a shitton of herbs, not letting you taste the flavor of the meat. And then they give you some disgusting yogurt cucumber sauce to go with it, as if the flavor of the meat wasn't already ruined. Pitas are disgusting, falafel is acceptable but overrated, and dolmas are some of the grossest things I've ever eaten. I have not once eaten greek and been happy with my meal - it's always been borderline acceptable to outright disgusting.

Outside of budae jjigae (which was only created after the war due to food shortages), most if not all, of Korean cuisine uses natural ingredients and veggies and is practically dairy-free, unless you want to slather it with American processed crap such as cheese.

Dishes like galbi-Jim, jjamppong, hwedupbap, Bossam, ganjang gejang/shrimp don’t get appreciated enough, not because they don’t taste good, but because all people know of when they think of Korean food is BBQ and chicken.
