Most caviar comes in cans.
I mean, I guess you could pay a ridiculous amount of money to get a whole sturgeon, but they're big, and the quality of the caviar will be degraded because it isn't immediately washed and salted.
Probably need to have a bunch of friends over to go through all that fish; a small sturgeon is going to weigh around 45 pounds. Meat is good smoked or deep fried.
Practicality, man. Sealed cans preserve a food source beyond the normal spoilage time while allowing seasonal harvest.

You can. Brine packed is reasonably suited to heating in the can; bring a pan of water to a simmer, cut heat, drop in a tin of kipper snacks. Wait around 4 minutes, remove, dry, open.
Not recommended to directly grill a plastic lined can; that method was common before plastic lined aluminum cans became common. If you do find tinned steel cans, open the can to prevent explosion, remove the lid (no volcanoes!), and just set it over a heat source (stove burner, grill, candle, whatever). Works better with flat cans than tall cans, but most flat cans these days are aluminum and plastic lined... so not really recommended. (Concern is the plastic lining; we know it's OK up to around 200F because those temps are used in production - so warming in a hot water bath should be fine.)
Dump it into a creme brulee ramekin and oven it for 5 minutes, or dump into a frying pan. You know, like fisherman's eggs, just without the eggs. Or with the eggs.
A number of recipes call for doing sardines in a pasta sauce; simmer the deenz for a few minutes in the sauce; pull the deenz out, toss the sauce with pasta, plate pasta, place deenz artfully on top.
Toaster ovens are convenient; a toasted french roll, topped with deenz, then placed back in to broil the deenz for a minute comes out nice. If you toast it with garlic butter, very nice - basically deenz on garlic bread.

Plastic lining isn't really a problem, so long as you don't scorch it while your fish is inside.
Can't scorch it if it's in a water bath.
Probably don't want to just drop the can on your stove burner coil, though.

The upside of the liner is that the fish and sauce aren't in contact with the metal, and aren't picking up a metallic taste as it slowly corrodes the can from the inside out.
We noticed an improvement in flavor when they transitioned from the tin lined steel cans with the wind up key opener to the plastic lined aluminum cans with the pull ring, most notably with tomato sauce varieties.

In deenz, the clear lid is amazing.
That's oil packed smoked brislings. The smoke is mild, not overpowering.
The kippers are very smoke forward. I think they claim beechwood smoke; not sure what others use. Firmer texture than many other brands.
The ovalcan is a fine example of a latin america style tomato sauce deenz. You may need to check in the aisle by the refried beans and taco kits; some stores stock ovalcan as ethnic food instead of deenzfood. There are going to be purists who lean towards California Girl or La Sirena in this style; they can go get assfucked dry with a telephone pole.
Haven't tracked down the "jitney" sardines yet; they're a flip style in a skinny round can.

Now: if you eat canned tuna, YOU NEED TO GET POLAR. Night and day difference when comparing Polar to CotS/BB/Starkist. I swear, they must chop a huge tuna steak off, add 3 drops of water (because the label lists water as an ingredient), and seal the can.
If the good folks at mwPolar want to drop a case in the mail, damn right I'll take it, and this is honestly the only canned tuna I got such a hardon for after my first taste that I went back the next day and bought a full case.

I enjoy something soft - a commodity bread or roll, with dough conditioners - that is thicker than my thumb is wide. Has to be a soft crumb, but denser than a wonderbread or cheapass hotdog or hamburger roll. A hard roll is too firm.
A loaf of Texas Toast slices might work.
A number of frozen dough dinner rolls work. (I am not shilling for Rhodes, but their stuff is pretty good.)
The French rolls (like a 6" sub roll) I get from the gas station work great.

They do make some no added salt varieties, but don't be hung up on olive oil for packing.

Yeah, right now I get some pretty good meatballs for $3/lb with a 2-to-1 fat/protein ratio which is an easy solution for all my non-carbs and they microwave well, so I'm not expecting to beat that for a daily holdover.
