Here you go you lazy niggers

400 g Beef
2-3 Onions

Sauce:
4 tblsp Soy
2 tblsp Sake
2 tblsp Mirin
2 tblsp Sugar
1.5 dl water or stock
1 package Dashi
1 tbspn grated ginger

Cut the onions into fairly thick wedges (Around 5-7 vertical cuts through one half) and brown in a large pan in a bit of oil. I like mine really deeply browned so I usually go for 15 minutes. While onion is cooking, cut your meat into strips, salt and pepper liberally.

As the onion finishes cooking, remove it from the pan and add your meat. Cook the meat on high until you get a nice fond on the bottom of the pan, then and add your sauce mixture and deglaze the bottom of the pan.

Add back your cooked onions into the pan, and let simmer until sauce reaches desired consistency. Add salt to taste. Serve in a deep bowl on top of a bed of rice, some scallion, a softboiled egg with a runny yolk, and some red pepper flakes.

I omitted it from the recipe, but when deglazing I like using red wine in addition to the sauce mixture. The flavor goes very well with the beef.
