Fish and fishes. How do you cook them?

Generally if it's a white fish I like it beer battered and in fish tacos. If it's small pieces I like it to be panko breaded like fish sticks. If it's not white fish then it should be seared, broiled, or smoked

first time I tried to cook a piece of salmon pan seared recently I over cooked the tits out of it. The skin came out looking nice but I was waiting for it to turn whitish like it did in ramsay's video but it didn't, they add color agents to salmon apparently. It was the consistency of a med well steak I was pissed. Im not really sure what temp I should be cooking it at, it also stuck to the pan a bit for some reason despite having plenty of fat in the pan. Too much, even

anyways pan seared filet from a chef that doesn't suck at cooking it is my preferred method

I cook it pretty hot. Medium high flame. A little cornstarch on the skin to keep it from sticking. Sear until skin in crispy. You should be checking when your salmon in done by testing how easily it flakes. Temp and color aren't the best to go by. Once the fish easily flakes apart it's done. It takes less time that you think. I usually but it under a 550f broiler to finish it after searing.
