The best burger I ever had too was one I made myself. Buns fried in butter, a thin smashed patty seasoned with salt and pepper cooked ever so SLIGHTLY less than burgers are usually cooked, sliced onion cooked in pan with the patty, cheddar cheese, lettuce beneath the patty as a grease shield, "special sauce" consisting of a blend of mayo, spicy brown mustard, and dill relish spread on both buns.

That was my favorite burger, and I've never recreated it because usually the whole frying the buns thing doesn't work out as well, for whatever reason they pretty much always come out just being half burnt and half just soggy butter but that one time it worked perfect.

I went on a three day hike on a trail in Arkansas with my friends and when we were all done, we drove to a local pub called Hugo's. Don't know if it was the exhaustion, but it was far and away the best burger I have ever eaten.

What's the good method for smashing patties by the way? The only methods I've found are doing it on the counter, which means you have to disinfect your counter after, and smashing it between two plates, which means you have to dirty two extra plates

the american bounty restaurant/tavern at the CIA New York. it was a couple years ago but from what i can remember:

>thick bacon
>onion marmalade
i wish i had written it down. it was so fucking good. washed it down with some stout. god fuck that was a good meal.

Some bar and restaurant I used to get buzzed at before watching movies. They served "cuban burgers". I've tried to replicate them at home but they weren't as good.

You can also just spread the meat out on the parchment paper, slap it onto the skillet, and peel the paper off. Let's you completely control how thin it is.
